An exceptionally crafted vintage-style absinthe created as a tribute to one of the world’s most famous pre-ban absinthes, Pernod Fils. Jade 1901 has a balanced flavour with a strong herbal aroma and an aftertaste rich in wormwood and aniseed. It has a distinct pale golden colour with a greenish tinge and fresh, woody aromas with notes of sage, tarragon and lime blossom. The alcohol content combined with the strength of wormwood provide the characteristic palate-numbing sensation absinthe is known for.
Fabrica de Tequilas produced and distilled this blanco Tequila using agave cooked for 10 hours in steam-powered autoclaves. After the addition of special yeast, the batch was then fermented and moved into stainless steel pots for double distillation. To blend this blanco, Rooster Rojo used water filtered through Mexican silver, creating its sumptuously smooth profile.

La Maison Fontaine Chocolat Absinthe Liqueur is inspired and by an old handwritten recipe and the flavour is a really distinctive and exciting taste. Its nose is rich in chocolate notes with liquorice and aniseed coming through and the taste is sweet with definite dryness and aniseed absinthe notes coming through strongly alongside lighter, milky chocolate notes. It’s the absinthe that really stands out but the chocolate adds a really interesting twist.

A young Havana Club offering, this 7 year old Cuban rum gets its amber hues from the bourbon casks it’s matured in. Hayman’s London Dry was launched in 2008 and is the brand’s shot at the classic dry gin style. Almond, vanilla and baking spices create an aroma to draw you in and then they also prop up the agave flavour with additional sweetness. Smokiness comes through at the end and is a welcome addition to the sweetness.

Roots Kanela Liqueur is a blend of cinnamon, clove, nutmeg and citrus. The brand may be new, but Kanela isn't – first being seen in Greece in the 15th century.
Produced and distilled in the heart of Tequila, Mexico, by Fabrica de Tequilas, this reposado was made with blue agave that was cooked in autoclaves using steam for 10 hours. A special yeast is then added to the agave juices before fermentation, which lasts as long as 72 hours before distillation.
Rooster Rojo reposado is subsequently double pot distilled in stainless steel pot stills, before being 'rested' in oak. Water filtered through Mexican silver is added to blend the product down to a measured 38% ABV.

Ron Santiago de Cuba Aňejo 8 year old is aged in old oak barrels in Santiago de Cuba, the cradle of light rum. This rum has classic aroma of a Cuban rum, lighter in style than other rums, with aged notes. Excellently balanced, it is undeniably smooth and delicate with notes of honey, vanilla and cacao.
Its flavour perfectly embodies the rum from the Oriente of Cuba (the south east of the island): smooth, fruity and rich. It has a unique aroma that stands out in blind tastings amongst other Cuban rums.
