This expression is made from a blend of Espadin and Cuishe agave varieties, each bringing their own distinct flavours and characteristics. Pazo Licor de Hierbas is a contemporary and delicate liqueur produced in Galicia, Spain and offers a distinctive flavour which brings together elegant grape spirit and a wide range of specially selected botanicals, fruits, herbs and spices. Pazo includes flavours such as sharp lemon grass, sweet lime blossom, tea, cancella and a range of spices which combined create a sweet liqueur that doesn’t disappoint and is pleasingly smooth on the palate.

The signature gin from the East London Liquor Company, a distillery based in Bow Wharf (right near Victoria Park, for those of you that know the area). This London Dry Gin is made with 100% British wheat spirits and infused with a bright selection of botanicals, including fresh lemon and grapefruit peels, cubeb berries, cardamom, coriander, angelica root and Macedonian juniper berries.

The Kyoto Distillery, the city's first dedicated gin maker, has fast become recognised for its fastidious attention to detail. Its second release, Ki No Tea, has been meticulously created to the same exacting standards. The limited edition expression is the result of a partnership with noted tea grower and blender Hori-Shichimeien, which was founded just to the south of Kyoto in 1879. A carefully selected blend of teas, including Tencha and Gyokuro, have been added to the botanical recipe (Hinoki cypress, yuzi and juniper, among others) which imparts an intense aroma and depth of flavour. Ron Matusalem went and sourced some wine casks for this limited edition release! The rum is charcoal filtered and matured in a solera system, before it's finished in casks which previously held Tempranillo wine. The tropical notes from the rum work wonderfully with the spicier notes from the wine cask, with just 8,000 bottles released. Rather snazzy bottle there, too.

The world’s first bottled Ouzo, Ouzo 12 offers up the taste of Greece. Crystal clear until you add water when it turns milky-white, Ouzo has the distinct fresh flavour of fennel, liquorice on the nose and subtle spices underneath. On tasting the strength of liquorice is released and the fresh fennel notes come through strongly with a welcome hint of sugar at the end. The long finish is intense with liquorice and it’s a flavour which you won’t’ forget in a hurry.

Produced and distilled in the heart of Tequila, Mexico, by Fabrica de Tequilas, this reposado was made with blue agave that was cooked in autoclaves using steam for 10 hours. A special yeast is then added to the agave juices before fermentation, which lasts as long as 72 hours before distillation. Rooster Rojo reposado is subsequently double pot distilled in stainless steel pot stills, before being 'rested' in oak. Water filtered through Mexican silver is added to blend the product down to a measured 38% ABV.
