Produced and distilled in the heart of Tequila, Mexico, by Fabrica de Tequilas, this reposado was made with blue agave that was cooked in autoclaves using steam for 10 hours. A special yeast is then added to the agave juices before fermentation, which lasts as long as 72 hours before distillation.
Rooster Rojo reposado is subsequently double pot distilled in stainless steel pot stills, before being 'rested' in oak. Water filtered through Mexican silver is added to blend the product down to a measured 38% ABV.
Batanga reposado Tequila is produced at the Casa Orendain, which was founded all the way back in 1926! It's distilled using 100% agave, harvested from the Orendain plantation and fermented with yeast which is locally produced at the distillery from a recipe which is over 80 years old. Batanga is named after the eponymous drink created in the 1950s, which is a simple recipe of Tequila, cola and lime juice. We're sure the Tequila itself wouldn't go amiss in one of those!
Casa Dragones Mizunara, a 100% Blue Agave Reposado sipping tequila, holds the distinction of being the inaugural tequila to be exclusively rested in mizunara. Mizunara is a unique and scarce Japanese oak, traditionally reserved for maturing Japanese whiskies.
"Mizunara," which directly translates to "water oak," is known for its softer and more porous nature compared to other oaks. Jose Cuervo 1800 Silver Tequila is a premium silver tequila that slightly plays against the rules of tradition by resting, rather than aging, in an American oak barrel for up to 15 days after distillation, just long enough to take on a dash of colour and a slightly oaky body of flavour. Sporting the freshness of a traditional silver, the flavour deepens a bit, getting a bit spicy toward the end, and definitely savoury.
