Silk Road Rose Fenjiu: "Based in Shanxi province, southwest of Beijing, Famed for its elegant ‘light-aroma’ style. With a history dating back 6,000 years, the Fenjiu Distillery still follows the ancient methods, using organic sorghum, water drawn from the Gouzhuang spring 840 metres below the nearby forest, double fermentation, double distillation with cornhusks added to the fermented grain, and long maturation periods in ceramic pots. The grain culture used to start the fermentation process is a combination of barley, peas and water, formed into bricks and left to develop in warm, humid conditions for up to two months until they grow yeasts, fungi and microorganisms. Fenjiu is matured in ceramic jars for between five and 30 years before blending and bottling. These breathable containers allow micro-oxygenation of the spirit and remove impurities, all without adding flavour. Rooster Rojo Reposado, 70cl

Produced and distilled in the heart of Tequila, Mexico, by Fabrica de Tequilas, this reposado was made with blue agave that was cooked in autoclaves using steam for 10 hours. A special yeast is then added to the agave juices before fermentation, which lasts as long as 72 hours before distillation. Rooster Rojo reposado is subsequently double pot distilled in stainless steel pot stills, before being 'rested' in oak. Water filtered through Mexican silver is added to blend the product down to a measured 38% ABV.

Fabrica de Tequilas produced and distilled this blanco Tequila using agave cooked for 10 hours in steam-powered autoclaves. After the addition of special yeast, the batch was then fermented and moved into stainless steel pots for double distillation. To blend this blanco, Rooster Rojo used water filtered through Mexican silver, creating its sumptuously smooth profile.

Rooster Rojo is produced using only the best ingredients and techniques. Rooster Rojo Anejo is made with Blue Agave, they used the Fabrica de Tequilas method, where you cook the Piña for 10 hours in autoclaves. After this, a special yeast is added to the Agave, just before fermentation. Rooster Rojo Anejo is double distilled in stainless steel pots and then aged in oak barrels. Finally, water that is filtered through Mexican silver is added to the drink, bringing it down to 38% ABV.
