Fabrica de Tequilas produced and distilled this blanco Tequila using agave cooked for 10 hours in steam-powered autoclaves. After the addition of special yeast, the batch was then fermented and moved into stainless steel pots for double distillation. To blend this blanco, Rooster Rojo used water filtered through Mexican silver, creating its sumptuously smooth profile.

With a history dating back 6,000 years, the Fenjiu Distillery still follows the ancient methods, using organic sorghum, water drawn from the Gouzhuang spring 840 metres below the nearby forest, double fermentation, double distillation with cornhusks added to the fermented grain, and long maturation periods in ceramic pots. The grain culture used to start the fermentation process is a combination of barley, peas and water, formed into bricks and left to develop in warm, humid conditions for up to two months until they grow yeasts, fungi and microorganisms. Fenjiu is matured in ceramic jars for between five and 30 years before blending and bottling. These breathable containers allow micro-oxygenation of the spirit and remove impurities, all without adding flavour. While Canadian whisky is often a showcase of different grains, Signal Hill focuses instead on casks. The distillery takes corn and malt spirit and ages them in three types of cask – ex-bourbon, ex-Canadian whisky and new oak. The three casks bring out different aspects of the whisky's character – vanilla and toffee notes, sweet grain and oaky spice respectively – creating a flavoursome and well-balanced whisky.

This is followed by a creamy vanilla moment before more lemon and eventually a brief hard boiled barley sugar with orange rind. Finish is  silky and leaves you with a lovely lemon barley note and a desire for more of the same.

Full bodied and packed with deep brown sugar notes, Skipper is a molasses-based rum which brings together seven different individual rums. Its deep mahogany hues hides a brawny, bittersweet flavour which is burnt on the palate and features crème brulee notes. The finish is cracked black pepper on hot toast with a faint hazlenut taste. Impressive stuff for the Smirnoff crew.
